You’re right, Tara. That sounds daft.

I’ve seen Szechwan spelled Szechuan or Sichuan so I have absolutely no idea as to the proper way to spell the thing. But I do know that there’s a Sichuan Pavilion in Rockville, MD that has the best damn mapo tofu in the city! It looks like it’s in a sort of abandoned shopping center. The first time we went, I drove past the thing three times just to make sure we were in the right place. But if you like you some spicy Chinese food, this is damn sure the right place. It seems like it’s a great local spot because every time I’ve been in there, it’s been packed. They’re not terribly fussy about decor or cooking all modern fusiony bullshit. This is good, solid, real Chinese food. So if you’re ready to graduate from fakey mall Panda Excuse for Chinese Food, head on out to Rockville and prepare to have your taste buds kicked square in the spicy zone.

    By hanyu pinyin (the official Romanization method of the Chinese government), it should be Sichuan. The other spellings are older spellings, dating from when China first made contact with the West. (see Wikipedia).

    Transliteration means the spelling will have been a moveable feast, I guess. Like Bombay/Mumbai, the current Latin alphabet spelling is just the latest best attempt to phonetically match another orthography’s conventions.

    alwayslurking’s off to a start: both are correct, depending on which romanization system you’re using to transliterate Chinese. 四川 is romanized as either “Szechwan” or “Szechuan” in the old Chinese Postal Map Romanization system. However, the current official romanization standard is Hanyu Pinyin (which has also been the ISO standard since 1982), whence we get “Sichuan”. So, to elaborate on alwayslurking’s response, 四川 is Sichuan, and will probably always be Sichuan.

    Bombay and Mumbai, though, is a whole other can of worms, since those are separate names, and *not* an issue of transliteration: http://en.wikipedia.org/wiki/Mumbai#Toponymy

    Man, who knew studying modern Chinese literature would come in handy!

    As far as I can tell, “四川” is about the only proper spelling. There have been a lot of different attempts at romanizing Chinese.

    I won’t touch Chinese food in southern New Mexico. Well, that’s not true, I have but it has never been worth it. But when we go to Phoenix, it’s another story. We have friends there who really like finding new places to eat, and frequently they’re Chinese. And on more than one occasion, we’ve been the only Caucasians there.

    Get your self over to near Ft. Meade. Go to Grace Garden (they are on the web). Best Chinese food ever, and I have been to NY, SF and Vancouver chinatowns. They are seriously good. I will even eat their eggplant dish because it is so awesome. Bit of a drive for you, but you will not regret the trip.

    Yes, we can see that Kane’s in the middle of a dilemma, which should be a delightful dilemma, considering the attractiveness of both the ladies. However, we know how totally obtuse Kane can be. This should prove to be “terribly awkward and uncomfortable and awesome.”
